Cleaning Your Restaurant
Mopping the dirt, oil, and grease spread around is time consuming, so better substitute mop with other cleaning methods if the floor is oily. Make sure that any oil or grease in the floor is immediately removed to avoid any slips and falls. Scrub of any stain, sweep away all the waste particles dropped, and keep your floor spotless.
Always keep the kitchen clean. Clear the counter top, wash all the used plates and pots, and allow them to dry to avoid fungal growth. Washing, sanitizing, and drying should be repeated regularly. Sanitize the restroom including, sinks, counters, toilets, urinals, light switches, and doors.
After each shift, clean the fryers; brush the grill; put all cleaning rags in laundry; put aprons and coats in laundry separate from cleaning rags; empty sanitizing buckets; wash and sanitize all surfaces like cutting boards; empty steam table and clean it; wash floor mats; clean the walk-in refrigerator; and check the kitchen floor.
Weekly and Monthly Cleaning
Cleaning that can be done weekly includes emptying reach-in coolers, washing, and sanitizing them; cleaning sinks and taps; oiling cast iron cookware; cleaning ovens and coffee machines; sharpening knives; and cleaning the floor drains.
Monthly cleaning can be done in different shifts. Wash behind the hot line oven and stove to reduce build up of grease; clean freezers; empty and sanitize the ice machine; calibrate oven and thermometers; wash walls and ceilings; sharpen the slicers; wipe dry storage area; change pest traps; and restock the first aid kit.
There are some measures that can be done once a year to keep your restaurant clean like checking fire suppression system and fire extinguishers gas equipments.
